Orange Mashed Parsnips

The only thing better than a delicious recipe is an easy delicious recipe. This recipe is so simple—two ingredients—I really can’t even count it as a recipe. I modeled the it after a side dish I had at Blossom in NYC a month or so back.

I prefer mashed parsnips over mashed potatoes; their earthy, rich flavor is unrivaled by plain old spuds. Parsnips are high on the glycemic index, so for those of you counting carbs, I suppose I would steer clear. But–opposite of their rooty cousin, the carrot—they are low in sugar. They are also full of fiber, and they taste so good! Just like dirt. No? You don’t like the taste of dirt? Okay fine, they taste EARTHY! And mixed here with a hint of orange, they are creamy and comforting and melt in your mouth. I had to stop myself from tonguing my immersion blender when I was finished with them—that thing has a blade!

Orange Mashed Parsnips

Serves 3|Prep time: 1 minute| Cook time: 15 minutes

You will need:
5 or 6 medium sized parsnips
2 medium sized juicy oranges

2 tablespoons maple syrup
1 tablespoon Earth Balance or your vegan buttah spread of choice.

Step one:
Bring a pot of water to a rolling boil. Peel parsnips. Add parsnips to water, boil 6 – 8 minutes, or until you can easily pierce them with a fork.

Step two:
Drain parsnips and return to pot. Using a grater, zest 1 orange all up in there. Then juice that orange, and the remaining orange into the pot. I like to squeeze them out with my hands, but you could use a juicer if you want.

Step three:
(If you’re adding the optionals ingredients, do so here. I like most of my recipes as clean and unadulterated as I can get them, so I don’t add these unless I’m trying to impress someone who might not be as crazy about the earthy flavor of parsnips.) Using an immersion blender, blend everything in the pot until it is thick and creamy and delicious. Don’t lick blender blades.

*No immersion blender? Place all ingredients in a food processor.
