Because I like everything with a little kick to it, this is my favorite way to enjoy greens! You can also throw in other veggies, like the mushrooms and onions in the above photo.
You will need:
1 tbsp sesame oil
2 tbsp sesame seeds
2 tbsp fresh minced ginger
2 cloves garlic, minced
4 cups greens, packed tight. I like bok choy, spinach or kale (or a mix of the three).
2 tbsp low sodium soy sauce
1/4 cup cider or rice vinegar
1 tsp cayenne pepper (more or less to taste)
Place a wide pan or wok, if you have one, on stove and set to hot. Once heated, sprinkle on sesame seeds and toast lightly, stirring so they don’t burn, 1 minute.
Add oil, garlic and ginger and saute for 2 minutes.
Add greens (make sure they have been cleaned first) and cook until tender, stirring frequently, 2-3 minutes.
Add soy sauce, vinegar and cayenne and cook 2 minutes.
Serve over brown rice, with whatever you have on hand, or along side any of your favorite Asiany dish. Can I say Asiany? Is that not PC?
